I love pancakes, but I do not love the calorie count nor the refined flour normally used when using a box mix. The solution is to make my own. I have made pancakes using coconut flour and I have just found this recipe from the Biggest Loser website for oatmeal pancakes.
Whole grains are much better than refined flours. The recipe calls for rolled oats, but I would definitely use steel cut oats. Steel cut oats are not processed like rolled oats. The lack of processing equals greater nutrition. There is no syrup in the picture (lots of sugar). I have used plain Greek yogurt and fresh berries with great success.
I am interested to know your thoughts, before or after you make the pancakes.
6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla
In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed. Makes about 10 pancakes.
